tis the season for food and flowers, valentines day brought some beautiful flowers from my mister. and some fondant fancies that i made for him with the lovely miss Leni Kauffman. And then i had a week of celebrating pancakes, because i was feeling very shrove tuesday festive, its kinda like christmas to me. i i don’t think the festivities of pancake day have ended yet.

i will post my pancake recipe soon, cos seriously they were sooo delish that actually its my duty as a pancake disciple to share them with the world, or at least the three people out there in the whole universe reading this blog 🙂

oatmeal and raisin cookies

I have long been on a search for a really good “cakey” cookie recipe, something of the “ben’s cookie” variety. I have tried a few and finally, after tweaking and researching i think I got the result i wanted from this little recipe.
Let me know what you think if you try it.
makes about 11 cookies

1/2 cups of butter, melted in a bain marie
2/3 cups sugar
1 egg
1 teaspoon vanilla extract
3/4 cup wholemeal flour
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1 1/2 cups rolled oats
1 cup raisins

heat the oven on quite a low heat (175°C ish).this helps with the soft texture

          melt butter in bain marie
          soak raisins in hot water

In a large bowl, whisk together the butter, brown sugar, egg and vanilla until smooth.

add dry ingrediants and the soaked raisins

chill in fridge  for at least 20mins

          spoon on to a lined baking tray (i used a 1/4 cup measuring scoop per cookie)

pop in oven until edges are brown but the middle is still a little undercooked looking- (this sometimes take 12mins but in my oven about 17 mins)

ta-da!
