I have long been on a search for a really good “cakey” cookie recipe, something of the “ben’s cookie” variety. I have tried a few and finally, after tweaking and researching i think I got the result i wanted from this little recipe.Let me know what you think if you try it.makes about 11 cookies
1/2 cups of butter, melted in a bain marie
2/3 cups sugar
1 teaspoon vanilla extract
3/4 cup wholemeal flour
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1 1/2 cups rolled oats
1 cup raisins
heat the oven on quite a low heat (175°C ish).this helps with the soft texturemelt butter in bain mariesoak raisins in hot water
In a large bowl, whisk together the butter, brown sugar, egg and vanilla until smooth.
add dry ingrediants and the soaked raisins
chill in fridge for at least 20minsspoon on to a lined baking tray (i used a 1/4 cup measuring scoop per cookie)
pop in oven until edges are brown but the middle is still a little undercooked looking- (this sometimes take 12mins but in my oven about 17 mins)ta-da!
